Spaghetti with garlic and anchovies

Prep time: 10mins.

Cooking time: depends on the pasta you use.

Ingredients:

  • 320g Spaghetti

  • 2/3 cloves of Garlic thinly sliced

  • 5 Anchovies in oil

  • 1-2 fresh chillies thinly sliced

  • Half a bunch of flat leaf Parsley

  • 100 ml Extra virgin olive oil

  • Parmesan/pecorino to serve

  • 1-2 pinch coarse salt

  • Pepper

Cook pasta until al dente (pretty much a minute or two short of the packet cook time).

Fry the garlic, chilli and anchovy fillets on medium heat until anchovy fillet has broken down and garlic is just golden.

Add pasta with a little pasta water. stir to combine. Add parsley and be confident with seasoning.

Serve with a heap of parmesan or pecorino.

This dish is best eaten hot.
